Khaman Dhokla is a very traditional and popular snack from the colorful state of Gujarat. Basically, it is a steamed savory sponge cake tempered with spices for drooling aroma and usually served as breakfast or tea time snack with spicy chutneys. People also love to have it as a side dish in their lunch or dinner menu.

As per the traditional recipe, dhoklas are made by soaking chana dal in water, grinding and then fermenting the batter before actually putting into steamer. This whole process takes 10 -12 hours of labour. But, here we are giving an instant recipe to make these spongy, savory cakes with besan (Gramflour). Recipe Ingredients

  • Gramflour (Besan) – 1 ½  cups
  • Turmeric powder – 1 teaspoon
  • Sour curd – ½ cup
  • Ginger chilly paste – 1 teaspoon
  • Asafetida – A pinch
  • Sugar – 1 teaspoon
  • Fruit salt or eno – 1 teaspoon
  • Salt – To taste
  • Water – ½ cup approx.

For tempering -

  • Refined oil – 2 tablespoon
  • Mustard seeds – 1 taspoon
  • Asafetida – A pinch
  • Green chilly – 2 slit lengthwise

How to make Khaman Dhokla | How to make Dhokla

  • To begin with making this instant ‘Khaman dhokla’ we need to make the batter first.
  • For this, in a large bowl combine together gramflour, turmeric powder, sour curd, salt, sugar, asafetida, ginger chilly paste, water and whisk till it forms a smooth batter. Take care not to form any lumps. The consistency should resemble to a cake like batter.
  • Meanwhile, prepare a steamer by boiling around 2 cups of water.
  • Add eno or fruit salt to the batter and give a gentle mix. Do not mix rigorously otherwise all the air bubbles formed while fermentation would escape and you won’t get fluffy n spongy dhoklas.
  • Pour this fermented batter immediately into the steamer bowl greased with oil.
  • Transfer the bowl to steamer and cover with lid.
  • Steam on medium heat for 15-20 minutes or till a toothpick comes out clean.
  • Remove from heat.
  • Let it cool down for few minutes at room temperature.
  • To demould, place an inverted serving plate on the bowl and carefully turn the bowl upside down. Tap lightly and demould. Cut into pieces.
  • ‘Khaman dhokla’ is ready. If you’re counting on calories, then you c of can avoid tempering and serve this healthy dhokla with chutney of choice. But, if you want to savor true Gujarati flavors, then we need to temper it before serving.
  • For tempering, heat oil in a pan and add mustard seeds, asafetida, green chilly. Wait till you hear the crackling sound of mustard seeds. Switch off the flame and pour this tempering over the dhokla.

Garnish with chopped coriander and serve as per serving suggestion above.
