Recipe Ingredients

  • Raw rice - 1.5 cups
  • Cauliflower (Cut in florets) - 2 cups
  • Potato (Cut in 1 inch cubes) - 1 cup
  • Green chilli (Slit) - 2
  • Onion (Thinly sliced) - 1 medium
  • Ginger garlic paste - 1 teaspoon
  • Ghee or refined oil - 2 tablespoon
  • Salt - To taste
  • Water - 3 cups 

Powdered spices -

  • Garam masala - 1.5 teaspoon
  • Red chilli powder - 1 teaspoon
  • Turmeric powder - 1 teaspoon 

Whole Spices -

  • Cumin seeds - 1 teaspoon
  • Bay leaf - 2
  • Black pepper - 7-8
  • Black cardamom (Badi elaichi) - 2 broken
  • Cloves - 4

How to make Lucknowi Aloo Gobi Tahari

  • To make this Lucknawi Aloo Gobi Tahari, wash and soak rice in water for an hour atleast. Drain the excess water and keep aside.
  • Now heat ghee in a pressure cooker and add in all the whole spices.
  • When they begin to crackle add sliced onion and fry till it gets a nice golden color. Also add ginger garlic paste and saute till the masala oozes out ghee.
  • Now add in the cut cauliflower, potatoes and saute with this masala for a minute or two.
  • To this add in the soaked rice, water and all the powdered spices. Season with salt and give a nice stir to combine well.
  • Put the lid of pressure cooker and cook for one whistle over high flame.
  • Reduce the flame and simmer for 2 minutes before switching off the flame.
  • Aloo Gobi Tahari is now ready, but let the pressure release before opening the lid of pressure cooker.
  • Top with Ghee and serve. Do refer our Serving suggestions above to make an exciting platter.
