Recipe Ingredients

  • French beans – 100 gms.
  • Button mushrooms – 100 gms.
  • Garlic – 2 pods (Finely chopped)
  • Onion – 1 medium (Roughly chopped)
  • Olive oil – 1 tablespoon

For Balsamic dressing –

  • Balsamic vinegar – 2 tablespoon
  • Sugar – 1 teaspoon
  • Salt – To taste
  • Black pepper (crushed) – ½ teaspoon
  • Red chilly powder – ¼ teaspoon (Completely optional)

How to make Garlic Roasted Mushroom And Beans Salad

  • To begin with making this robust salad, let’s start with the dressing.
  • To make dressing for our salad combine all the ingredients listed under ‘Dressing’ category. Mix well to dissolve the sugar completely. Keep aside.
  • Now we are ready to switch over our veggies. Remove the stalks of beans and blanch in hot water for 2 minutes. Drain out the water and keep the beans aside in cold water to retain the green color.
  • Cut mushrooms into halves and keep aside.
  • Heat olive oil in a pan and add minced garlic and roughly chopped onion. Saute for a minute or till the raw flavor of garlic goes. Do not brown
  • Immediately add in the mushrooms and sauté on high flame for another minute. Do not overcook as we just need to cook the veggies slightly. Remember, veggies must retain some bite.
  • Now add in the blanched beans and pour over the dressing. Give a quick toss and remove from flame.

Transfer this hot salad to a serving plate or bowl and enjoy as it is or pair with lovely dishes as suggested!
