A simple paneer recipe that you can make for your everyday meal is this humble Paneer Khurchan. Unlike any other paneer curry such as Matar Paneer Curry or Kaju Paneer Curry, this Paneer Khurchan recipe has a very distinct flavor & texture which is perhaps due to the beautiful combination of veggies that are cooked just till tender while still maintaining a bite.

This recipe is quite easy and prepared with staple ingredients like capsicum, onion, tomatoes, garam masala. The best part you do not need any lengthy procedures like roasting or grinding, hence it is super quick and you can literally make it under 10 minutes without any extra efforts. Team with rotis, paranthas, theplas, rice or just pack a quick lunch box, this is a keeper for days when you are running out of time and need to assemble something really fast and easy. Basically it is a dry preparation of paneer, but you can also add little amount of gravy with ready made tomato puree.

Well, most of the times when I am in a hurry to go somewhere, what I do is layer some quickly made paneer khurchan on a parantha/roti, top with little amount of tomato ketchup or chuntney and make a roll. This makes a delicious on go meal, though you need to take care that never miss to wrap it finally with 1-2 layers of aluminium foil. This makes the wrap easy to handle and mess free while you are driving or working on your system.



Paneer Khurchan and Ajwain Puris make for a delicious weekend brunch. During summers pair it with Masala Chaas or Aam Panna and enjoy the meal.

So let’s make a quick ‘Paneer Wrap’ for them. Layer Missi Roti or Palak Parantha with paneer khurchan, add little amount of thinly sliced onion, cucumber, carrot and make a final layer with mayonnaise. Roll it and wrap with aluminum foil.

Recipe Ingredients

  • Paneer - 300 gms.
  • Tomato - 1 large
  • Onion - 1 medium
  • Capsicum - 1 medium
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chilly powder - 1 teaspoon
  • Garam masala powder - 1 1/2 teaspoon\
  • Salt - To taste
  • Kasuri Methi - 1 tablespoon
  • Oil - 1 tablespoon
  • Water - 3-4 tablespoon 

To garnish -

  • Freshly chopped coriander

How to make Paneer Khurchan

Paneer Khurchan is super simple and quick one to make. So to begin with making this we need to get ready with paneer & all the veggies.

  1. Cut tomatoes, capsicum and onion into big chunks or say in 1 inch cubes. Also cut paneer into desired shapes n size. Keep aside.
  2. All preparations are over now and we can head to cooking. So heat oil in a pan. Add in cumin seeds and allow to splutter.
  3. Now add in the cut tomatoes, onion, capsicum and saute for a minute or two just enough to make them slight tender as we do not need to cook these veggies completely.
  4. Add in paneer cubes, turmeric powder, red chilly powder, garam masala and season with salt. Take care to mix very gently otherwise you are going to break all the paneer pieces and end up making paneer ‘Bhurji’.
  5. You can add 3-4 tablespoon of water while cooking to avoid burning. Cook for 3-4 minutes on low to medium heat and when everything comes together switch off the flame.
  6. Crush some Kasuri Methi between your palms and add in to the paneer khurchan. This gives a lovely flavor and aroma. You can also make Kasuri Methi at home.
  7. Last but not the least, garnish with freshly chopped coriander and serve hot.
