Aloo Kebab is an easy Awadhi recipe of Kebab, made with potatoes, garlic, ginger, fennel seeds. These Crispy and stir fried Aloo Kebab is a popular party snack in Lucknow.

Aloo Kebab is a wonderful version of the classic Kebabs from the rich Awadhi Cuisine that are originally made with minced meat along with a rich and aromatic assortment of spices. But here in this vegetarian version we are making Kebabs with Potatoes.

This Vegetarian Aloo Kebab is not only delectable in each perspective but wholesome too. Recipe Ingredients

  • Potatoes (Boiled & peeled) - 2 large or 3 medium
  • Chikpea flour (Besan) - 1/2 cup or as required
  • Ginger garlic paste - 1 teaspoon
  • Green chilli (Finely chopped) - To taste
  • Ginger (Grated) - 1 teaspoon
  • Onion (Finely chopped) - 1 tablespoon
  • Fresh coriander or mint (Finely chopped) - 1 tablespoon
  • Salt - To taste
  • Oil - To shallow fry 

Whole Spices -

  • Fennel seeds (Sauf) - 1 teaspoon
  • Cumin seeds (Jeera) - 1 teaspoon
  • Black pepper (Kali mirch) - 1 teaspoon crushed

Powdered Spices -

  • Red chilli powder - 1 teaspoon
  • Garam masala - 1.5 teaspoon
  • Dry mango powder (Amchur) - 1/2 teaspoon

How to make Aloo Kebab

  • To make Crispy Aloo Kebab we need to dry roast besan till it gives out aroma and changes color.
  • Mash potatoes in a large mixing bowl and add in other remaining ingredients (Except oil) including powdered & whole spices.
  • Also add roasted chickpea flour or besan and mix everything to combine well. It should form like a dough. In case you notice that it is still wet, then add more roasted besan and mix.
  • Now when our Kebab dough is ready we are all set to shallow fry them.
  • Grease your palms with oil and divide this dough into 10-12 portions.
  • Take one portion and shape into Tikki or whatever shape you prefer. Here I have used a heart shaped cookie cutter to give shape.
  • Shallow fry in hot oil on either sides till brown and crisp.
  • Serve hot with chutney and onion slices.
