One of the significant sources of protein for vegetarians is ‘Soybeans’. While there are multiple ways to indulge into it, the most delicious and simple way is to make this aromatic pulao with soya chunks or nuggets. Here in this recipe, power packed soya nuggets simmered with basmati rice, spices, ghee soak up all the beautiful flavors and make a scrumptious one bowl meal that goes well with almost all sorts of raita, chutneys and pickles.

Soya chunks are neutral in taste, hence it is easier to work with them as they do not over power with the taste of any other ingredient and you can cook them with almost all sorts of vegetables, spices and flours.

Soya Chunks Pulao

Recipe Ingredients

  • Basmati rice – 1 cup
  • Soya chunks – 1 cup
  • Ginger – 1 inch piece
  • Garlic – 5-6 pods
  • Green chilly - 2
  • Cinnamon – 1 inch stick
  • Cloves – 4
  • Bay leaf – 2
  • Black cardamom – 2
  • Cumin seeds – 1 teaspoon
  • Onion – 1 large (Finely sliced)
  • Garam masala powder – 1 teaspoon
  • Water – 2 cups (Adjustable)
  • Ghee or oil – 2 tablespoon
  • Edible food colour (Orange) – A pinch (Truly optional)

How to make Soya Chunks Pulao

  • To begin with making this protein packed soya chunks pulao, we need to wash the rice…rinsing it 2-3 times or till you get clear water. Soak it in sufficient water for 30 minutes.  Drain excess water and keep aside.
  • Also wash and soak soya chunks in hot water for 1 hour. Keep covered. Drain and keep aside.
  • Take ginger, garlic , green chilly in a mixer and make a paste by adding little amount of water. Keep aside.
  • Now, heat oil/ghee in a pan. Add in the sliced onion and fry till it turns golden and crisp. Transfer to a plate and keep aside.
  • Now in the remaining oil, add all the whole spices and allow to crackle.
  • Add ginger, garlic, chilly paste and sauté till the raw smell goes and separates from the oil. Add garam masala powder and sauté for a minute.
  • When our masala is ready, its time to add in the rice. Cook for a minute with the masala without adding water.
  • Add water, salt, soya chunks and give a nice stir. Cover and cook on medium flame for 10 minutes or till the water is well absorbed.
  • Turn off the heat.
  • Mix food color in 2 tablespoon of rice and spread it over pulao. If you aren’t using food color, skip this step.

Garnish pulao with fried onion and serve hot as per our serving suggestions above.
