These ‘Masala rava namak pare’ are savory, spicy and slight tangy due to amchur (Dry mango powder), spices and team up great with thandai during Holi. You can make these in large batches and pack in air tight containers as they have a long shelf life and stay fresh upto 2 months.



‘Namak pare’ is a traditional North Indian snack with refined flour or maida and is usually made during the festivities. In many families it is a must in the menu chart at the time of Holi. Apart from serving a wonderful festive snack, this crunchy, flakey, savory also makes a perfect tea time snack. You can even pack them in your kid’s snack box for a change or carry along for picnics.

Recipe Ingredients

  • Refined flour (Maida) – 1.5 cups
  • Rava (Sooji/semolina) – ¼ cup
  • Refined oil – 2 -3 tablespoon
  • Carom seeds – 2 teaspoon
  • Salt – To taste
  • Water – To knead dough
  • Oil – For deep frying

Powdered spices –

  • Black salt – 1 teaspoon
  • Red chilly powder – 1 teaspoon
  • Dry mango powder – 2 teaspoon
  • Garam masala powder – 1.5 teaspoon

How to make Masala Rawa Namak Pare

  • To begin with making these crispy ‘Masala namak pare’, we need to make a dough first.
  • For this, combine all the ingredients mentioned under first category (Except ‘Oil’ for deep frying) and make a hard dough with water, similar one that you knead for making puris.
  • Cover this dough with a wet muslin cloth and leave to rest for 10 minutes.
  • After resting, knead the dough lightly so that it is set and firm
  • Divide this dough into 4-5 equal balls.
  • Apply little oil on the rolling board and rolling pin to avoid sticking of the dough.
  • Now take a ball, flatten it slightly with your palm and roll out in a circle. You can keep the thickness as per preference.
  • With the help of a knife, cut into 1 inch squares, diamonds or rectangles. You can also use a pizza cutter for this.
  • Prepare the remaining namak pare similarly. Meanwhile, heat sufficient oil in a wok for deep frying.
  • When the oil is hot enough, lower the heat and gently drop the namak pare.
  • Deep fry on low to medium heat till they get a nice golden colour and become crispy. If you are making in large quantity, deep fry in batches.
  • Transfer these fried namak pare in a plate with kitchen napkins to absorb the excess oil.
  • Namak pare are ready, but since here we are making spiced version, hence we need to add in the ‘Masala’.
  • To make masala, mix in all the powdered spices in a bowl and sprinkle over the fried namak pare and give a mix.

‘Masala namak pare’ are ready. Let it cool at room temperature and then store in air tight containers.
