Masala bread upma is classic dish made with leftover breads, assorted veggies like onions, capsicums and carrots, mushrooms, paneer and some spices as per the ingredient list.

This Bread Upma makes a scrumptious breakfast and snack option within some 15 minutes and is a great way to use Leftover Bread that is staple in all kitchens.

Brimming with varied flavors and textures, this Bread Upma is sure going to entice your taste buds. We have added few basic veggies like onion, capsicum to add on the taste…but you can also add tomatoes, beans, carrots, mushrooms, paneer or whatever interesting you can come up with. Also a little amount of ‘Curd’ adds moisture and binds the flavors. This recipe is also perfect to be packed for your kids in school and fits perfectly for little snacking in between the work.

Did you know, a similar dish called ‘Panzanella’ is made in Italy which is basically a chopped salad of toasted bread, tomatoes, onion, parsely tossed together in little olive oil and basically served as a summer dish. I guess… this Upma is the Indian cousin to it.

Yup, the world is so small….!



I prefer to serve Masala Bread Upma with a garnish of chopped onion, fresh coriander, lime juice and some crunchy farsaan. You can top it further with fried/toasted peanuts, tomatoes and some freshly chopped carrot, ginger, capsicum or green chilli if love to eat spicy.

Kids would love to have it with a topping of cheese or some crumbled paneer.

If packing for your kid’s school tiffin, then do not add ‘Tomatoes’ and ‘Curd’ since it would make the upma soggy. Instead pack with some tomato ketchup in a small leak proof box.

Recipe Ingredients

  • Bread slices - 8
  • Oil - 1 tablespoon
  • Curry leaves (Kadi patta) - 1 stalk
  • Cumin seeds (Zeera) - 1 teaspoon
  • Dry red chilli (Sookhi lal mirch) - 1 broken
  • Ginger (Adrak) - 1 teaspoon
  • Onion (Finely chopped) - 1 tablespoon
  • Capsicum (Chopped) - 1 tablesppon
  • Turmeric powder - 1 teaspoon
  • Red chilli powder - 1 teaspoon
  • Garam masala powder - 1 teaspoon
  • Curd (Dahi) - 2 tablespoon
  • Salt - To taste
  • To garnish (Truly optional) -
  • Chopped onion
  • Fresh coriander
  • Lime juice
  • Farsaan/peanuts

How to make Masala Bread Upma

  1. To make this Masala Bread Upma keep all the ingredients ready in hand.
  2. Cut bread slices into 1 inch pieces or simply tear the bread with your hands. Keep aside in a bowl.
  3. Now heat oil in a pan and add in cumin seeds, curry leaves, dry chilli and as soon as they splutter add in chopped onion, ginger and saute till pink.
  4. Add in chopped capsicum and cook for a minute till it turns soft.
  5. Now it’s time to add in the curd, garam masala powder, red chilli powder and turmeric powder. Keep the flame low and stir it continuously for few seconds.
  6. Add in bread pieces, salt and stir to combine well. Cook for a minute and turn off the heat.
  7. Masala Bread Upma is now ready. Garnish as suggested above and serve.

Step 1 -

Cut bread slices into 1 inch pieces and keep aside.

 

Step 2-

Now heat 1 tablespoon of oil in a pan and add in cumin seeds, dry red chilli and fry for few seconds till you get an aroma.

 

Step 3 -

Add in curry leaves, ginger, onion, capsicum and saute for a minute.

Step 4 -

Add in all the powdered spices like turmeric powder, red chilli powder, garam masala and stir to combine well.

Step 5-

Time to add in curd. This adds a moisture in bread upma.

 

Step 6 -

Stir well on low flame to bring out the flavors.

 

Step 7 -

Add in the bread pieces that we had cut initially.

 

 

Step 8 -

Mix to combine the bread with the masala.

Step 9 -

Final touch….add in chaat masala and fresh coriander.

 

Step 10 -

Delicious Masala Bread Upma is ready to tantalize your tastebuds. But, before serving do not miss to top it with lime juice, chopped onion and sev/farsaan. Omit this if you want to keep it quick and simple!
