Who doesn’t loves Dahi Vada? The lip smacking recipe of Dahi Vada comes from Punjab and is a must in every festive or party menu of not only Punjabi festivities, but also in most of the North Indian states. Now whip up this lip smacking Chaat item at your home with our easy recipe.

Soft fluffy vadas topped with creamy curd seasoned with salt/sugar and delicious khatti meethi chutneys is a delight on its own and is often paired with main course as a drooling side dish. These vadas are basically deep fried dumplings made of Dhuli Urad Ki Dal soaked and ground into paste and perked with green chilli, coriander to add on the flavors. After deep fry these dumplings are soaked in water that not only makes them softer and tastier, but also perfect to absob all the lucious flavors when served with whisked curd, chutneys and spices.

NOTE - The key to soft vadas is to whisk the urad dal batter till it gets fluffy and airy!

Recipe Ingredients

For Vadas -

  • Urad dal (Skinned/Dhuli urad dal) - 1 cup
  • Green chilli (Finely chopped) - 1 or to taste
  • Freashly chopped coriander - A handful
  • Salt - To taste
  • Baking powder - A pinch
  • Oil - To deep fry 

For Whisked Curd -  

  • Fresh curd - 2 cups
  • Salt - To taste
  • Sugar - 1 teaspoon

How to make Dahi Vada

There are basically 3 components in a traditional way to serve Dahi Vada or Dahi Bhalle -

  1. Vada
  2. Whisked curd
  3. Toppings

Let us begin with making ‘Vadas’.

Making Vada -

  1. Wash and soak urad dal in sufficient water for 4 hours atleast. Rinse off the extra water and ground to a fine batter in your mixer grinder.
  2. Empty this batter in a bowl and mix in chopped chilli, coriander and salt. The batter to make Vada is ready now and we can proceed to deep frying these.
  3. Now heat enough oil in a wok or kadhai and drop in spoonfulls of batter. Fry over medium to high heat taking care that vadas are cooked uniformally and do not burn.
  4. Carefully take these vadas out with a slotted spoon, put in a plate and finish off the batter making more vadas.
  5. After when you are done making vadas, take a bowl and pour in about 2-3 cups of water or sufficient enough to dip in the vadas.
  6. Soak vadas in this water bath and put in refrigerator. These vadas have to be soaked atleast half an hour before serving.

Making Whisked Curd -

  1. A well prepared Curd or Dahi topping is equally essential in Dahi Vada as the Vada itself.
  2. So for this take curd or dahi in a mixing bowl and season with table salt & black salt. Whisk till smooth and creamy.
  3. You can adjust the consistency to your preference. For instance, if you feel that the curd (dahi)  is too thick, then mix in some water.

Whisked curd or Dahi is now ready. 

Serving Dahi Vada -

  1. To serve Dahi Vadas take one soaked vada from the water bath and gently press in between the palms to remove excess water.
  2. Put this vada in a serving bowl and top with whisked curd.
  3. Sprinkle roasted cumin powder, red chilli powder and serve. You can also get innovative with the final topping and use more ingredients to preferance. So do not miss to check out our Serving Suggestion above.
