Searching for an interesting twist to the regular pasta or noodle recipes? ….then try out our recipe for this super simple ‘Tomato Cheese Pasta’. We have used this wonderful spiral whole wheat pasta that adds some extra nutrients, fiber and makes a well rounded meal for weekend dinners. Besides the generous use of tomatoes give it a lovely peppy flavor that goes great with mozzarella cheese making it rich and creamy. But, if you’re not into mozzarella cheese then try out processed, cheddar, parmesan or any cheese of your choice. You can even try with cream cheese that gives an amazing tanginess to this dish and makes it ultra creamy.

 Well…I was in a hurry to cook and eat, hence made this pasta in the simplest possible way with mild garlic flavor, but you can go onto adding some assorted veggies like mushrooms, capsicum or onion. A word of caution, be careful while boiling pasta as a little mismanagement in techniques can make it soggy, undercooked or over cooked and your dish might not come out perfect. *If you’re having a birthday party or get together at home and want to stick to a Continental menu then serve this tomato cheese pasta with garlic bread, grilled potato wedges and strawberry milkshake.  Want to team with some ‘Soup’ then sweet corn clear soup would be the best!

*Pack this whole wheat tomato cheese pasta in your kid’s tiffin for a change. Pair with bread pizza and baked French fries. Your kid would love this for sure.

*On weekend evenings, generally I prefer to have a bowl of tomato cheese pasta with a glass of cold coffee . To me, this is like stress buster.  In winters accompany with homemade frothy Cappuccino and enjoy the chilly weather !!

Recipe Ingredients

  • Pasta – 2 cups
  • Tomato red – 1 large
  • Tomato ketchup – ½ tablespoon
  • Garlic (Crushed)  – 3 cloves
  • Basil leaves – 4-6
  • Oregano – 1 teaspoon
  • Chilly flakes – 1 teaspoon or to taste
  • Mozzarella cheese (Grated) – ½ cup approx.
  • Salt – To taste
  • Oil (Preferably olive oil) – 1 tablespoon

How to make Tomato Cheese Pasta

  • To make this Italian ‘Tomato Cheese Pasta’ we need to boil the pasta first.
  • Boil pasta in water as per instructions on packet. Reserve some water and drain excess for further use. Keep the pasta aside.
  • To begin with making tomato sauce for our dish, we need to blanch tomato in water.
  • Blanching Tomato -
  • Make two slits or ‘Cross’ over the eye portion of tomato, this would ease out the peeling afterwards. Now boil 2 cups of water in a saucepan and put in the tomato. Simmer on medium heat for 3 minutes approx. Remove from heat and transfer to a strainer. Let the tomato cool at room temperature or till bearable and peel off the skin (Begin with the slit) which would come out right away.
  • Puree this blanched tomato in a mixer. Keep aside.
  • Now heat oil in a pan and add in the crushed garlic cloves till slight pink.
  • Add in the tomato puree, tomato ketchup and simmer on medium heat till the raw smell goes…. 2 minutes approximately.
  • To this add cooked pasta, salt, chilly flakes and half of the oregano. Give a nice mix. If you find the sauce dry, then add some of the reserved pasta water.
  • Tear basil leaves and add in. Cook for 2 more minutes or till pasta and sauce come together.
  • Finally lower the heat and add in half of the mozzarella cheese. Give a nice mix and cook with a lid for a minute or till the cheese melts.
  • Remove from heat. Transfer this pasta to a baking dish or ceramic bowl.
  • Sprinkle remaining oregano, cheese and bake in a pre heated oven on 200 degrees for 5 minutes or till the cheese on top melts and becomes golden and slight crisp.
  • Remove from oven and serve immediately.
