Unlike a traditional sandwich, the pineapple sandwich is a Bengali sweet that has found favour with people around the world. Kids love this spongy dessert, made from fresh cottage cheese, semolina, khova and pineapple.

The sweet comes from West Bengal, and is very similar to a regular rasgulla, or rasmalai. The pineapple used gives

it a truly fresh fruity flavour. Your children will look forward to this sweet in summer months since it is a twist to the regular way they would eat pineapple. That’s why it is a favourite, with Indian mums who are trying to coax their children into eating more fruit!

The alluring look of this dish is thanks to the filling, the use of strands of saffron and fresh cherries. You can make it even more appetising by using freshly grated coconut sprinkled over the top, along with powdered sugar.

Recipe Ingredients

  • 200g Cottage cheese (paneer) - freshly prepare is preferred, but store bought will also do
  • 1 and ½ tsp semolina
  • 1 tsp sugar  

Making ‘Filling’for Pineapple Burfi :

  • ¼ cup khova
  • 10 - 15 almonds
  • 10 - 15 cashewnuts
  • ¼ tsp lemon rind (grated)
  • Pieces of pineapple (fresh or dehydrated)
  • Fresh cherries for garnish

Making ‘Sugar Pineapple Syrup:

  • 1 cup sugar
  • 2 cups water
  • ½ tsp cardamom powder
  • ½ tsp pineapple essence
  • Few strands saffron
  • Pinch of salt

How to make Pineapple Burfi

For this recipe, it is preferable to use fresh paneer. Here’s how to prepare it:

  1. Boil 4 cups of milk on a medium flame, then add 2 tsp of lemon juice diluted with 4 tsp of water. If you do not have lemon juice at home, vinegar will also do to curdle the milk. Once the milk has curdled completely, remove from flame and cool using ice cubes. This cooled paneer is then placed in a muslin cloth and hung to drain it completely.
  2. Now, take the paneer you have prepare and knead it along with semolina and sugar to prepare 8 oval shaped pieces.

Next, you will prepare the syrup that the pineapple sandwich will soak in.

  1. Mix together all of the syrup ingredients in a pressure cooker. Allow it to heat and when it is close to the boil, place each piece of the pineapple sandwich in one by one. Place the lid on the pressure cooker and allow to cook for two whistles.
  2. Remove from heat and allow to cool within the pressure cooker for about
  3. 45 minutes. Next, open the lid of the pressure cooker and allow to cool completely.

Finally, we will prepare the pineapple sandwich to be served.

  1. Take out the cooled pieces and slit them down the middle.
  2. Add in the stuffing to each of the pieces, as listed in the filling ingredients. The cherry is carefully placed on the top for a final touch

Tips

  1. After the paneer has been prepared, wash it thoroughly with water to remove the sour taste of the lemon.
  2. Knead the paneer properly in the beginning, else the pieces can break during the cooking process.
  3. Do not overcook the pieces in the cooker as they can become hard and rubbery.
  4. Do not split the pieces while they are still hot; allow to cool well.
  5. Saffron imparts a lovely flavour and colour to the pineapple sandwich. In case you cannot get your hands on saffron, try childsafe food colouring instead.
