In this recipe of Falahari aloo tikki, we have added Rajgira atta also known as ‘Amarnath Flour’ which gives a good binding and crisp coating too. Though you might also substitute it with Kuttu ka atta (Buckwheat flour) and Singhare ka atta (Water chestnut flour), the results would be more or less similar.

Did you know, ‘Rajgira atta’ popularly known as ‘Ramdana’ in Northern India is a power house of nutrients and is a good source of calcium, protein, other nutrients and easy to digest too. This grain which is only remembered during Navratri, Ganesh Chaturthi, Shivratri or Janamashtami should be consumed through out the year. So try to include Rajgira Atta in your regular diet. Recipe Ingredients

  • Boiled potatoes - 4 large
  • Rajgira atta (Amarnath flour) - 3 tablespoon
  • Ginger (Grated) - 1 teaspoon
  • Fresh coriander chopped - 2-3 tablespoon
  • Green chilly (Finely chopped) - 1-2 teaspoon or to taste
  • Sendha namak/Farali salt - To taste
  • Cumin seeds (Jeera) - 1 teaspoon
  • Black pepper (Kali mirch) - 5-7 coarsely ground
  • Ghee - For brushing

How to make Rajgira Aloo Tikki

To begin with making these ‘Baked Falahari Aloo Tikki’ peel potatoes and keep all the ingredients handy.

  1. In a mixing bowl mash potatoes. If they are cold, then you can grate them.
  2. Mix in rest of the ingredients (Except ghee) and make a dough.
  3. Now apply some ghee on your palms and divide this dough into equal size balls.
  4. Take one ball and press gently giving it a disc or patty kind of shape. Similarly make tikkis or patties with all the remaining balls.
  5. Now brush your baking tray with ghee and line these tikkis without overlapping in a single line.
  6. Brush some ghee on tikkis as well and bake in a pre heated oven at 220 degrees for 15 minutes or till they get golden and crisp to your perfection.
  7. Remove from the oven and serve hot.

Note -

  • Since these tikkis are ‘Baked’ and not fried, hence they won’t get too crispy.
  • You can substitute Rajgira atta with kukku ka atta or singhare ka atta. The proportionate ingredients would be similar.
