Usually we make it with fresh seasonal fenugreek leaves during winters, but in summers if you crave for this amazing flavor, then do try making it with dry leaves or kasuri methi….you’ll love every bit of it!

This kasuri methi aloo sabzi perked with cumin seeds, coriander seeds, asafetida (Hing) and Homamade Kasuri Methi tastes divine with rotis, paranthas, rice and also makes a wonderful side dish for lunch box since you can make it in a jiffy during busy working mornings. We haven’t used any Onion Garlic to simplify the recipe while keeping it quick n instant, but you might go for if you have some time in hand as browning of onions and garlic requires bit of time.

Recipe Ingredients

  • Potatoes (Boiled/peeled) - 2 large
  • Cumin seeds (Jeera) - 1 teaspoon
  • Coriander seeds (Dhaniya) - 1 teaspoon
  • Dry red chilly (Sookhi lal mirch) - 1 broken
  • Kasuri methi/dry fenugreek leaves - 2 tablespoon
  • Asafetida (Hing) - A pinch
  • Salt - To taste
  • Garam masala powder - 1 teaspoon
  • Red chilly powder - 1 teaspoon
  • Dry mango powder (Amchur) - 1 teaspoon
  • Refined oil - 2 tablespoon 

To garnish -

  • Freshly chopped coriander - A handful

How to make Kasuri Methi Aloo

  1. To make Kasuri Methi Aloo. For this cut potatoes in chunks.
  2. Dry roast kasuri methi in a pan for half a minute and transfer to a bowl. This enhances the aroma.
  3. Next, in the same pan heat oil and add cumin seeds, coriander seeds, asafetida, dry red chilly and let it splutter.
  4. Add in potato chunks, all the powdered spices, salt and give a nice mix.
  5. Cook on medium flame for 2-3 minutes. Add in kasuri methi, give a mix and continue cooking for a minute.
  6. Remove from heat.
  7. Kasuri methi aloo sabzi is now ready.
  8. Wasn’t that simple & quick ?

Tip -

Use small or baby potaoes for this recipe, they look drooling. 

If prefer, use boiled potatoes with the 'Skin'. It tastes good.
