Hare pyaz ki aloo sabzi is a simple recipe of the popular Jeera Aloo, but with a more robust flavor and texture due to the addition of fresh seasonal Hara Pyaz ( onion greens ). During winters, I often make Hare Pyaz Ki Sabji once a week and serve with laccha paranthas, ghee phulkas and sometimes with home made white butter too. Usually I like to add some peanuts also in this stir fry as they give a lovely crunch in each bite and also because I simply love Peanuts!!
The whole recipe is so simple that you would wonder why haven’t you tried this before?…..because all you need is to saute boiled potatoes with chopped spring onions and toss in some regular masalas like the garam masala and red chilly powder and it is ready. Yes…it’s that simple!
Isn’t that easy to pack a quick lunch box with this potato spring onion fry and some methi thepla, palak thepla or plain paranthas? You can also pack along homemade amla ki launji for an extra kick of nutrients.
For a simple winter meal team these hare pyaz ke aloo with makke ki roti or Punjabi masala parantha along with dal makhni, carrot mushroom masala and gajar matar ki sabzi. Do serve glassfuls of Punjabi lassi or beetroot raita to complete the meal.
If you’re not in a mood to cook an elaborate meal and just want to relish a quick lunch then simply serve this aloo hare pyaz ki sabzi with dal tadka and jeera rice along with a bowl of fresh curd.
