Papdi Chaat is spicy chaat recipe from Delhi.  For Papdi Chaat recipe we need crispy papdi slices, boiled potatoes, matar ghughni, chopped onion, chopped tomato, chopped coriander, tamarind chutney, coriander chutney and spices from our ingredients list.

Ask me the most delicious chaat that can be made in no time, then I would definitely name Papdi Chaat. It has that perfect combination of tongue tickling flavors of khatti-meethi chutneys, crispiness of Papdi complimented by boiled potatoes, chana/matar ghugni, whisked curd, farsaan/sev and spices. Flat thin crispies, also known as Papdis are easily available in markets and work best for this recipe, though you can even use Mathris.

Frankly speaking, there is no step by step recipe for Papdi Chaat as it is all about ‘Assembling’. Basically it has layers of papdi, boiled potatoes, matar ghugani, sprouts with the final toppings of dahi, chutneys, sev and powdered spices. You can also add chopped chilly, ginger, coriander, onion and also pomegranate to suit your palate.

As I always say that Chaat is all about mixing the right flavors in the right proportions ….and this parameter of ‘Right’ is decided by the person who is going to eat.

Adding chillies & ginger may be good to me, but might not be fine for you. Similarly, what sort of ‘Chutneys’ you want to add…that’s you who is going to decide depending upon whether you want it more sweet, sour or spicy? So, basically there is no set recipe for ‘Chaat’, it is all about individual liking & disliking. We are just giving here a basic preparation of how ‘Papdi Chaat’ is made, but you can make adjustments to suit your taste buds.



If you’re making Papdi Chaat for some Party or Get Together at your place, then we would recommend you to serve every component in separate bowls and let your guests have fun making their own plate as to individual taste & choice. So keep a batch of papdis, chutneys, curd, boiled potatoes, sev, chopped onion-ginger-coriander ready in hand.

Recipe Ingredients

  • Papdi - 10
  • Boiled potato - 2 medium (Cut in cubes)
  • Matar ghugani - 1 cup (Truly optional)
  • Khatti dhaniya pudina chutney - As required
  • Khatti meethi imli chutney - As required
  • Dal or chana sprouts - 2 tablespoon (Optional)
  • Dahi/curd - 1/2 cup
  • White salt - To taste
  • Black salt - 1/4 teaspoon or to taste
  • Onion (Chopped) - 2
  • Tomato (Chopped) - 2 tablespoon
  • Fresh coriander (Chopped) - 1 tablespoon
  • Green chilly (Chopped) - To taste
  • Ginger (Finely Chopped) - To taste

Powdered spices -

  • Cumin powder - 1/2 teaspoon
  • Chaat masala - 1/2 teaspoon
  • Red chilly powder - 1/2 teaspoon 

To Serve - 

  • Fresh coriander
  • Sev
  • Chutneys

How to make Papdi Chaat

  • To make Papdi Chaat we need to make the ‘Toppings’ first. See how to make these lip smacking toppings - 
  • Potato topping - For this in a mixing bowl take diced boiled potatoes, matar ghugani, sprouts and add in white salt, black salt, chutneys and all the powdered spices.
  • To this add chopped tomato, chilly, coriander, onion, ginger and give a final toss. Potato topping is now ready. Taste to adjust the flavors. 
  • Dahi topping - Now let us proceed to making ‘Whisked Curd’ or ‘Dahi’ for chaat. In another bowl take curd and mix in both the salts. Whisk till smooth and dahi is done. 
  • Final Assembling of Papdi Chaat - Arrange papdis in a plate and put a spoonful of aloo topping on each one.
  • Now top about a tablespoon of dahi mixture on each papdi.
  • Drizzle some khatti & meethi chutney on each.
  • Lightly sprinkle with black salt, cumin powder and red chilly powder.
  • Add a final garnish of sev and fresh coriander.
  • Papdi chaat is now ready. Serve immediately before it turns soggy.
  • Tips -In above recipe we have given ‘Sprouts’ & ‘Ghugani’ as a serving suggestion (Also refer pics). If prefer, you can make ‘Papdi Chaat’ without these too.
  • Besides you can also add pakodis, bhajias, wadas, boiled chana, boiled sweet corn for a twist.
  • Garnish with pomegranate seeds for an exotic & colorful appeal.
  • After whisking curd put in refrigerator to get chilled. It tastes best that way.
  • Last but not the least, adjust the proportionate spices, chilly, ginger, chutneys to your taste buds because no one knows your taste better than you….right???
