‘Matar ki chaat’ is yet another delicious addition in our list of chaat recipes. Like jhal muri, matar ki chaat or popularly known as  'Ghugni' is also a very popular street food in Kolkata and is made using dried pigeon peas, also known as ‘Safed matar’. These pigeon peas are pale brown in color and taste absolutely divine and robust with flavors when combined with onion, tomatoes, lemon juice and spices. Matar ki chaat is usually served as a snack and also tastes great as a main course dish when paired with bread, pav, kulcha or naan.



Serve matar ki chaat as a snack or team up with bread, kulcha, pav or naan for a tongue tickling main course meal. Team with wood apple squash and enjoy!

For main course, you can team matar ki chaat with aloo chana ghugni or achari dum aloo. Pair along dhaniya masala parantha with onion and lime wedges. Do not miss to serve sweet sonth chutney. Matar ki chaat and sonth chutney is a match made in heaven.

Matar ki Chaat

Recipe Ingredients

  • Pigeon peas (Safed matar) – 1 cup
  • Baking soda – ¼ teaspoon
  • Sugar – 1 teaspoon (Optional)
  • Black salt – To taste
  • White salt – To taste
  • Water – 3 cups approx.

Spices for sprinkling –

  • Cumin powder
  • Red chilly powder or pounded red chillies
  • Garam masala powder
  • Chaat masala
  • Black salt (If required)

For serving-

  • Sonth chutney – As required
  • Mint coriander chutney – As required
  • Tomato(Chopped) – 1
  • Onion (Chopped)- 1 small
  • Green Chilly (Chopped)- 2 (Optional)
  • Ginger (Chopped)- 1 teaspoon
  • Lemon juice – To taste
  • Fresh coriander/mint (Chopped)- A handful
  • Nylon sev – As required

How to make Matar ki Chaat

  • To begin with making safed matar ki chaat, first we need to wash and soak the pigeon peas in sufficient water for 8-10 hours.
  • Add 3 cups of water and pressure cook for 5-6 whistles (….or till cooked to your perfection)with baking soda, salt, black salt and sugar. Remove from heat and let the pressure release on its own.
  • Check salt and adjust accordingly.
  • Now we need to assemble the dish. So, transfer the cooked matar to serving plates and drizzle sweet tamarind chutney, mint coriander chutney and sprinkle all the powdered spices one by one.
  • Garnish with chopped onion, tomato, mint, coriander, ginger, nylon sev and finally sqeeze some lemon juice.
